Questions About Counting Those Calories

To all the calorie counters out there, how strict are you with your calories. Do you use them as more of a guideline, or are they a set perimeter that shall not be crossed?

Also, do you find it difficult to balance everything? It seems getting the perfect amount of the essentials, such as fat, fiber, protein, and vitamins, is quite challenging. How do you manage to be balanced?
